Pan Seared Halibut and Cauliflower Mash
Last night I made this recipe and it was healthy, low-carb, and delish!!!! I actually preferred the cauliflower mash to real mash potatoes!
Pan Seared Halibut
Ingredients: 2 halibut fillets (skin removed), black truffle oil (regular olive oil), truffle salt, pepper, Old Bay seasoning, fresh sage
Wash the halibut fillets and season with salt and pepper. Heat oil in a skillet and add sage. Add the fillets to the skillet and season with Old Bay seasoning and additional salt and pepper. Cook for 2-3 minutes on each side, until cooked through.
Cauliflower Mash
Ingredients: 1 head cauliflower, 4 Tbsp goat cheese (I used herb flavor), 2 Tbsp chopped fresh chives, 4 Tbsp light cream, sea salt
Wash and boil cauliflower until well cooked (soft and can be mashed with a fork). Drain very well and add to a mixer. Add the cream, goat cheese, chives, and sea salt and mix with a mixer on a slow setting. Add more cream if desired (less for a chunkier mash). Add more salt, if needed. Transfer to a baking dish and back at 350 degrees for 10 minutes. Serve hot.
